Vegan Eggplant Parmesan

Wow.

I have the best wife ever.  She made some Eggplant Parmesan tonight, but didn’t tell me it was vegan until I was half-way through with my generous helping.

She found the recipe at http://veganpandamonium.blogspot.com/ Wow.

We’ve really been focusing on healthy foods lately, and she just kicked it up a notch.  Wow.
